Hey! Hope you’re doing well today. I woke up this morning feeling light as a feather. Although I know I haven’t lost any weight, I ate such a light dinner last night and it’s surely not sitting on my stomach like so many dinners before. So what did I eat?

Yeah! Looks yummy right. It started off as a quinoa and squash salad, but that was a little too light LOL. We were all looking for more. So I decided to make it into a pasta salad. It was delicious! Take a look at the steps below….

I started with fresh kale, avacado, cucumbers, tomatoes, carrots, squash, and dried cranberries. Now when starting off I was just planning to make a regular salad, but soon realized by the sounds of “dadadada” and hard wheels of a walker that I didn’t have any baby food made for my baby. And not to mention I remembered I needed to work out and I’m ALWAYS starving after working out since being plant based so I knew I needed something heartier. So I grabbed butternut squash, mushrooms, and quinoa and got to work. Leaving out the cucumbers, carrots, and tomatoes, I added the kale, squash, mushrooms, and cooked quinoa into a pan to sauteed with some balsamic vinaigrette.

I cut the butternut squash in half, dug out the seeds, rubbed the meat of them with oil, cinnamon, and brown sugar. Then placed them directly on the oven racks… Skin side down (make sure there is nothing on the skin too prevent too much from dripping in the oven) for 35 minutes at 400°.

Once everything is ready I just mixed it together, but like I said even after all of that we we’re feeling a little underwhelmed. So I cooked some red lentil penne pasta. I mixed everything together again and….

Voila! Quinoa and butternut squash pasta salad…. #tasteliketorahtuesdays it was so good. My husband and I ate ours with the balsamic vinaigrette but I added a little poppyseed dressing for the little ones.
